So I happen to believe that a steak can be cooked well done and still be good if it is a cut that can tolerate it and if it is done correctly (I have had well done fillets that were delicious, even though I wouldn’t order one that way). That’s why I never watch this guy. I have no doubt that he is a good chef, but he makes his fortune out of berating and being a dick to people who are in no position to defend themselves.
BTW, that’s why I never watched Trump’s show on TV either.

Most well-marbled steaks can be cooked to pretty well done and still maintain a lot of flavor and tenderness (I'd say MORE tender than rare, and IMHO at least as tasty). It's the lean steaks that really can't be overcooked. I'm more of a medium guy, personally. Best of both worlds.

And that strategy works, but I don’t believe it’s the only way. I don’t think you have to shit on people to get the best out of them. But, being reasonable and kind wouldn’t get you nearly as high in the ratings, so...

Definitely depends on the cut. With a lot of Korean BBQ (yes, it’s just grilling but that’s what it’s called) beef is sliced thinly and typically sits on the grill until eaten, so most pieces are well done by the time you eat them. However, these pieces are still incredibly delicious and still tender since the beef used for these tend to be very well marbled (and possibly marinated).
However, for steaks, I’m okay with medium-rare or medium. I’ve accidentally overcooked steaks to medium-well but I’ve still enjoyed them.

For example, it's really hard to screw up a Filet or even a NY Strip or Porterhouse. They only times I've ever overcooked one of those it's because the cut was way too thin and I timed it wrong.

Meh, there’s times when he is that “character” and there’s times when he’s really trying to help people out.
I think the best example of that was the Hotel Hell show he did, I loved that show.
I honestly got completely tired of the normal cooking shows he did though. Especially Hell’s Kitchen where you know damn well they didn’t try and get good chefs on the show, just idiots who signed up to get yelled at.

I think you’re right. I don’t think he’s a bad guy. In fact I think he’s fundamentally a good guy. That’s why I watched him for a while. I just got tired of wading through the behaviors I didn’t like to get to the happy ending.
Also, agree with you about Hell’s Kitchen. I’m one of the demographic that would be more interested in him working with good chefs to get better.

I think it all depends on the cut. For burgers welldone is perfectly acceptable however, I think fillets, ribeyes, strips and the like that are a bit thicker and the “choicer” cuts of meat do taste better when cooked at medium. I think Gordon sometimes looks like he comes off as a dick because so many people try to push his buttons or tick him off. If you watch enough of his videos or shows you can see that he is generally well rounded and normally easy going. Most of his shouting is done in the kitchen because that is where he wants perfection and is paying for it. He doesn’t wish for it he demands it and those who were there to provide that on a regular basis actually got some pretty sweet deals and their own restaurants out of it.

I agree with you about the cut, and I agree about demanding perfection. I think he is a really good guy, and that sometimes comes out, but I also think the “dick” persona gets ratings and serves his purpose (and/or those of his producers). I’m someone who believes in a certain professionalism and courtesy in workplace behavior, and I have a hard time with someone whose every other word has to be bleeped out. That’s why I stopped watching him.

I get all that.
I really recommend you try out Hotel Hell. I don’t know if he did more than 1 season of it, but he was, while yelling at people, 100% in the right on the way to the happy ending. No one was defenseless or guiltless than got crap on those shows in my opinion.
Man I can’t understand how he can tolerate working with those idiot chefs. It must be 1 hell of a paycheck.

I don’t know man. I hope he’s chill off camera with those guys and goes -really sorry I said some horrendous things about you.
If you’re into the hospitality thing it was really cool. Failing hotels (which commonly have a failing restaurant in them) that he helps fix up and get them to start running intelligently. He sticks up for the employees who are commonly being treated like crap - which is refreshing.

My apartment mate in college was in the Hotel School. I kinda got a window into that crowd. Every year in the Spring the students host a weekend bash at the on-campus hotel with all kinds of parties for the bigwigs in the hospitality industry. I got to help out in the kitchen and behind the scenes. The logistics behind it made me think of what leading an army into battle must be like, except with whisks and spatulas instead of guns and grenades. A very cool experience.

I just looked it up there are 2 seasons done and they are signed on to do a 3rd at some point, it’s like a season every 2 years. I mean, dude is busy lol
